Domaine Dyckerhoff Reuilly Petit Gris

Located about an hour west of Sancerre, the region of Reuilly is dedicated mostly to Sauvignon Blanc, with small parcels of Pinot Noir and Pinot Gris (which is the only grape allowed for rosé from the region). Pleasantly aromatic with cool-climate acidity, this wine is so flexible when it comes to food. It will complement all courses of the meal with ease.

Clos Marsalette Pessac-Leognan Blanc

Located within Graves in Bordeaux, white wine production in the area is almost entirely Sauvignon Blanc and Sémillon. This particular wine is 60% Sauvignon Blanc (which provides aromatics of pineapple and stone fruit and an acidic backbone) and 40% Sémillon (which gives notes of beeswax and provides body and texture). Like many of the white wines of the region, it spends a small amount of time in oak barrels (35% new). It should pair with the richer charcuterie, as well as the salmon and potatoes.

Domaine Anne-Sophie Dubois 'L'Alchimiste' Fleurie

Anne-Sophie Dubois was born in Champagne and studied in Volnay for several years before taking over a few hectares of land in Fleurie (Beaujolais). She is committed to making her wines with influence from Burgundy, using large neutral oak barrels for ageing. L'alchimiste has finesse, structure, and loads of bright red fruit. It is a beautiful wine that will pair perfectly with the salmon dish, and the apero.
