Caramelized Onion & Bacon Butter

Caramelized onion & bacon butter! Sweet and savory. What could be a better butter?! Use this butter for almost anything — we’re back in the 2010s for this month — the bacon trend has been resurrected!

Suggested uses: toss it with vegetables or slather it on a chicken and roast, use it to glaze pasta or vegetables, spread it on bread or toast for a blt, cheeseburger, or breakfast sandwich.

Caramelized Onion & Bacon Butter
makes over 1#

shopping list —

  • 1# butter

  • 1# onions, sliced

  • .5# bacon, diced

  • 1 bunch thyme, picked

  • salt to taste

  • black pepper to taste

  • worcestershire to taste

equipment —

  • cast iron or saute pan

  • robot coupe or food processor

  • parchment paper, if rolling

steps —

  1. In a pan over medium heat, melt butter and begin to brown (this will help speed up the caramelization process). Add the onions and sweat. Turn down the heat to low, and cook until caramelized, stirring as needed. 

  2. Cook the bacon in a pan over medium heat until crispy. Drain off any excess fat. Allow to cool. 

  3. In the robot coupe, add the caramelized onions first. Pulse until finely chopped — or hand chop. Add the bacon, butter, and a pinch of salt. Pulse until it’s all incorporated. Finish with freshly picked thyme. Season to taste with worcestershire, more salt if needed, and black pepper.

  4. Roll.

The butter will last about 3 weeks in the fridge and up to 6 months in the freezer if wrapped well.
