Monet’s Cheese Galettes Recipe
Inspiration for our June apéro: Le Déjeuner sur l'Herbe by Claude Monet. “Blue skidoo, we can too!”
We designed our June menu to be split into two meals since it’s summer. Bring your apéro on a picnic before heading back home for the entree and dessert. Bonus points if you ordered the cheese and the mini charcuterie to add to your picnic spread:)
Order The June Box here! These cheese galettes are a great addition to a picnic as they take about 15 minutes to make — and they’re delicious even at room temperature.
Monet’s Cheese Galettes
makes 12 small galettes
shopping list —
200 grams fromage blanc
1 egg
100 grams ap flour
salt and pepper to taste
1 tbsp butter
1 tbsp oil
— optional —
sliced or chopped herbs like chives, parsley, or scallions
equipment —
medium size bowl
non-stick pan
rubber spatula
steps —
Add the fromage blanc to the bowl and add the egg. Mix together. Season with salt and pepper. If using herbs, add them to the mixture.
Gradually add in the flour and mix until smooth.
Divide the dough into 12 equal portions and shape each into a ball before flattening with your palm into an even but slightly thick “pancake.”
Over medium heat, melt the butter and oil together. Working in batches, cook the galettes for 5 minutes on each side or until golden brown and crispy. Add more oil and butter if needed between each batch. Sprinkle with salt and serve.
