Lilac Gimlet
IT’S SPRING, BABY! It’s time for lilacs to bloom — and even if they haven’t yet, keep this in mind for peak lilac season.
A gimlet is a classic cocktail made with gin, simple syrup, and fresh lime juice. We’re adding a spring twist with the addition of lilac simple syrup. Because of the cocktail’s floral notes, we recommend using a botanical gin like Hendrick’s and not a citrus gin. It’s a simple cocktail that is perfect for the season and easy enough to make when entertaining.
Lilac Gimlet

2 ounces botanical gin
3/4 ounces fresh lime juice
1/2 ounce lilac simple syrup (see below)

for the lilac simple syrup —
Pick fresh lilac (I’m sure your neighbor has a bush). Gently rinse to remove any bugs, dirt, etc.
In a pot, make a simple syrup using equal parts sugar and water. When the syrup comes up to a boil, turn off the heat and add the lilac blossoms. Allow to steep. Store in a sealed container in the refrigerator.

Combine all ingredients in a shaker with ice. Shake.
Strain into a coupe.
Garnish with lilac or a lime twist.
