Lilac Honey Lemonade

Celebrate spring with a refreshing drink that combines the floral notes of lilac blossoms with the sweetness of honey. P.S. Adding a splash of gin can turn it into a delightful afternoon cocktail — or see our lilac gimlet!

Lilac Honey Lemonade

shopping list —

for the lilac honey simple syrup —

  • 350 grams honey

  • 250 ml water

  • 50 grams lilac blossoms

for the lemonade —

  • 500 grams water

  • 75 grams lilac honey syrup (adjust to taste)

  • 125 grams freshly squeezed lemon juice (from 2-3 large lemons)

equipment —

  • small pot

  • chinois or fine-meshed sieve

steps —

for the lilac honey simple syrup —

  1. Mix honey and water in a small pot over medium heat until the honey dissolves.

  2. Rinse lilac blossoms and add them to the honey mixture.

  3. Stir, cover, and refrigerate for 48 hours.

  4. Strain and discard the lilacs.

for the lemonade —

  1. Combine the water, lilac honey syrup, and freshly squeezed lemon juice.

  2. Add gin for a fabulous afternoon cocktail.
