Peach Clafoutis Recipe

Very simple and very delicious. Any stone fruit or berries are fantastic here. Also doubles as a great little brunch treat. Et voila!

Peach Clafoutis
serves 4

shopping list —

  • 2 tbsp butter

  • 2/3 cup sugar

  • pinch of salt

  • 3 eggs

  • 1/2 cup flour

  • 1-1/4 cup milk

  • 1 pound peaches, sliced

  • 2 oz slivered almonds optional

equipment —

  • shallow baking dish or 6” cast iron skillet

  • bowl and a whisk OR a blender

steps —

  1. Preheat oven to 375º

  2. Butter a shallow baking dish in an even layer, including up the sides.

  3. Arrange peaches in a single layer and sprinkle with the almonds.

  4. In a bowl or blender, mix together 1/2 cup sugar, salt, and eggs.

  5. Add in the flour then add milk.

  6. Pour the batter over peaches.

  7. Sprinkle 1/4 cup sugar over the surface and dot with butter.

  8. Bake for 40 minutes or until golden brown.

  9. Serve with crème chantilly or ice cream.
