Sherry Flip
A flip is a style of cocktail containing egg, sugar, and a spirit or fortified wine. It’s similar to eggnog except it doesn’t contain dairy and has less alcohol. Flips were orginally served hot, often warmed with a hot poker, and were known as a sailor’s drink.
Grand Cafe didn’t have a full liquor license so we served a few different sherries, vermouth, and of course wine & beer. Jamie made a sherry flip for a private dinner at Grand with jidori eggs, and it’s stuck with me ever since.
You can also use other alcohol for a flip, like rum or brandy — but just be sure to use really good eggs:)
Sherry Flip
makes 1 cocktail
shopping list —
2 oz sherry - Manzanilla, Pedro Ximenez, or Oloroso
1/2 oz demerara simple syrup
1 whole egg
nutmeg
ice
equipment —
cocktail shaker
fine meshed small sieve
steps —
Crack the egg into the shaker and add the sherry and simple syrup.
Shake vigorously for 10 seconds.
Add the ice and shake again.
Strain the cocktail into a glass, and grate fresh nutmeg over top.
