Béchamel: So Simple

Recipe

Super simple, super good and the key to a really good macaroni gratin or savory soufflé!

Ingredients

100 grams of butter

100 grams of flour

1 quart of whole milk

1 cup grated cheese, gruyere or parmesan (option, but come on..)

Grated nutmeg, pinch

1 pinch of salt

Procedure

  1. In a medium sauce pot, over med/low heat, melt the butter and whisk in the flour. Cook for a few minutes, till it barely starts to take on color.

  2. Turn heat up to medium/high and slowly add in the milk while whisking. Continue cooking and whisking until it gets thick (5 mins or so).

  3. Whisk in cheese if using and season with nutmeg and salt.

Suggestions

If you are making a macaroni and cheese gratin, stir in cooked noodles at this point. Then top with breadcrumbs and pop her in the broiler. Yum!
