Battenfeld-Spanier Grüner Sylvaner

Located in the Rheinhessen (Germany's largest wine-producing region), Battenfeld-Spanier's vines sit on the region's famous calcareous subsoils- resulting in wines that are both mineral-rich and fruitful. This delightful white wine is made entirely from Sylvaner, and should be a fantastic pairing with both the vichyssoise and the souffle.

Mâcon-Villages La Cuvée de Béracius Domaine des Terres de Chatenay

It's only fitting that a Julia Childs themed dinner should include a bottle or two of Burgundy, and she certainly loved Chardonnays from the Mâcon. The wine is fermented and aged entirely in stainless steel lending itself to exceptionally bright citrus notes and orchard fruit aromatics. This should accompany both starters quite well.

Bader-Mimeur 'Dessous les Mues' Pinot Noir

This 5th-generation winemaking family pulls from their vineyards within Chassagne-Montrachet. This Bourgogne appellated Pinot Noir comes entirely from a clay-limestone-rich plot within Chassagne called "Dessous les Mues". It is aged in neutral barrel for 12 months and showcases aromas of red cherry, violets, and sweet spices. A classic pairing with boeuf bourguignon.

Famille Hoppenot Beaujolais Blanc 2023

Gregorie Hoppenot produces this lively Chardonnay very close to the Macon region in Burgundy. Gregorie practices organic viticulture and uses minimal intervention in the cellar. The wine is fermented in stainless steel and sees a little wood as well. The lively palate shows lemon butter and cream yet the wine retains nice tension, refreshing the palate with notes of mineral. This is an excellent starter wine and will pair well with the Apéro Course

Chapuis & Chapuis Chorey Les Beaune Rouge 2022

The Chapuis brothers, Romain and Jean-Guillaume represent a new wave of winemaking in Burgundy. They started their winery in 2008 and beyond the vineyards they own, they source from like minded growers who practice organic viticulture. In the cellar native yeasts are used and minimal sulfur is added to allow for terroir to shine through. The 2022 Chorey Les Beaune is a very approachable Pinot Noir, showing pretty red cherry fruit with well balanced tannin and acidity. This elegant red will go well with this classic Boeuf Bourguignon.

Carmes de Rieussec 2020 Sauternes

This is the second label of Chateau de Rieussec located next door to the famous Chateau d'Yquem. This dessert wine shows honeyed apricot fruit and notes of white flowers on the rich vinous palate, but it is not cloyingly sweet. Julie Child had an affinity towards Sauternes and you can see why with their ability to shine with a variety of dessert courses.

2022 Laurent Barth, Riesling Sec, Alsace, France 

Nicknamed the "Alsation Sensation," Laurent Barth is creating natural, organic wines with no added sulfur, which may result in some imperfections, but add character to the final wine's identity. This dry wine is a bright, pure expression of riesling, showing aromas of white flowers, lime and ripe stone fruit. The palate flavors match, and also bring racy acidity, and a mineral finish, which will contrast nicely with the creamy soup, cheese souffle and anything with carmelized onions.

2022 Resonance,  Chardonnay, Willamette Valley,  OR

An Oregon wine with a Burgundian accent, this expressive and concentrated Chardonnay comes from a winery established by the renowned Maison Louis Jadot family. Sourced from vineyards across the Willamette Valley, the wine is barrel fermented, then aged for 14 months in 20% new oak, stainless steel and concrete egg. It shows an elegant nose of white flowers, lemon peel, fresh almond, white pepper and vanilla, and a generous palate. The volume in mouth is highlighted by a nice tension, fruity aromas and a subtle minerality. Its richness and body will match beautifully with cheese and cream based dishes.

2021 Domaine de Fenouillet, Beaumes de Venise, Southern Rhone, France

This is the most important wine of the domaine in terms of production and the wine that we feel offers exceptional value!  The vineyards are situated on the massif of the Dentelles de Montmirail and much of the vineyard surface is laid out in terraces to accommodate the steep slope of the hill. The soil is clay and limestone and the blend is 50% Grenache, 40% Syrah and 10% Mourvèdre. Harvest and vinification is done parcel-by-parcel and the final blend is done after a long cuvaison designed to obtain the finest and most profound extracts. The wine is bottled unfiltered after eleven months of aging in cement vessel and is an authentic taste of the Southern Rhone sure to pair beautifully with the Wagyu Boeuf Bourguignon!
